Since I've been sick and haven't really left my apartment in days and haven't been doing much. So today I thought I would make some minus- chicken noodle soup since its the only thing I feel like eating and it's super easy to make.
The recipe is my own I have perfected it over many seasons of making chicken noodle soup, however there is no chicken since I am vegetarian :) The batch makes about 10 servings and I usually freeze some and keep it throughout the winter season. It is perfect, super easy to make and usually tastes wonderful!
I buy the vegetables frozen because let's face it when your sick you don't feel like cutting vegetables but I buy all organic so I know I am getting good quality. I use fresh cut onions for better taste.
Things you'll need:
4 cartons of vegetable broth (32oz each)
1 package frozen cut carrots (16oz)
1 package frozen peas (16oz)
1 package frozen corn (16oz)
1 carton of pre-cut onion (7oz) * you can find in grocery section by fruits and veggies
1 package of Kluski Amish noodles (1 lb)
* I find these noodles in the international isle of my super market, you can replace with other noodles but in my opinion I think they are what make the soup
Salt
Pepper
Garlic salt
Parsley flakes
You are going to use half of all ingredients besides the broth, if you want to double the recipe, just double the broth and you are all set.
1. Pour broth in extra large pot on medium heat.
2. Add 8oz of carrots, 8oz of peas, 8oz of corn and 3.5oz of pre-cut onions into broth. Stir.
*I only use half so I have spare on hand to make again and I purposely don't wait for broth to boil to add vegetables.
3. Bring ingredients to a boil. Reduce heat to medium low.
4. Season to taste with salt, pepper, garlic salt and parsley flakes. Stir.
*I usually put about two shakes of each in.
5. Add 1/2 (.5 lbs) the package of noodles. Stir and cover.
6. Cook until noodles are tender or to your liking.
7. Turn off heat and serve. :) Extra can be frozen or refrigerated.
